Kotompoutakia Lemonato - Lemon Chicken Drumettes

INGREDIENTS

2kg drumettes/wings
1/2 lemon zest, finely grated
1/3 cup lemon juice
4 tablespoons extra virgin olive oil
2 teaspoons garlic paste or 6-8 garlic cloves, grated
1.5 tablespoons Dijon mustard
2 teaspoons dried oregano
1 teaspoon dried thyme
1 tablespoon honey
1 teaspoon stock powder
salt and pepper to taste

METHOD
Preheat your oven to 180°C.


In a baking sheet, combine all the marinade ingredients.


Add the chicken drumettes to the marinade mixture and toss until evenly coated. Let them marinate for 10-15 minutes while the oven preheats.


Spread the marinated chicken drumettes on the baking sheet, ensuring they have some space between them to cook evenly.


Bake in the preheated oven for 40-45 minutes, basting and turning them halfway through the cooking time. Continue baking until the drumettes develop a slight char and the meat is tender and easily pulls off the bone.


Once cooked, remove the drumettes from the oven and sprinkle them with fresh thyme, oregano, or finely chopped parsley for added flavour and garnish.
