The Queen's Scones

INGREDIENTS
400g self-raising flour
1 level teaspoon baking powder
20g butter
30g sugar
1 egg
125ml double/thickened cream
125ml milk
1 egg yolk to glaze

METHOD
1. Preheat your oven to 200C fan. Combine flour, baking powder and butter and rub until you get a breadcrumb consistency.


2. Add sugar, beaten egg, milk and cream and mix until mixture is combined - be careful not to over-mix. It will be very sticky but this is a good thing.


3. Pour the dough mixture onto a well-floured surface and lightly pat the dough until it’s about an inch thick.


4. Cut into rounds with a scone cutter and place onto a baking tray with baking paper.


5. Glaze the top of each scone with egg yolk and bake in a very hot oven for 12-15 minutes.


6. Cool on a wire rack and enjoy with homemade jam and cream; jam first, though ;)
